1 cup soft butter
1 cup sugar
1 Vanilla bean (seed scrapped put)
4 eggs
1 organic Orange (juiced and zest grated)
1 ⅔ cups flour
¾ cup all-purpose flour
1 ½ tsps Baking powder
cup Orange juice
To decorate
2 cups powdered sugar
4 Tbsps Orange juice
red writing icing
strawberry Licorice string
large Gummy bear
Sugar ball (or other small sweets)

Preparation steps

Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6 and grease a loaf tin and dust it with flour.
Beat the butter until fluffy using a hand mixer. Gradually add the sugar and the vanilla seeds and stir for another 5 minutes.
Add the eggs one at a time and mix in well. Add the orange juice and zest. Mix together the flour, cornflour and baking powder and stir into the egg mixture to form a smooth dough.
Place the mixture into the prepared cake tin and bake for approx. 45 minute. Leave too cool in the tin, then carefully knock it out and leave to cool fully on a wire rack.
To decorate the cake, stand it on its small end and cut it in half vertically. Cut the locomotive out of one part and cut the other part in half through the middle to create to wagons. Use the cut-away part of the locomotive to make a funnel.
To make the icing mix together the icing sugar and the orange juice. Cover all parts of the train with the icing, place the funnel on top of the locomotive and leave everything to set.
Skewer the marshmallows on toothpicks and stick them onto the train for wheels. Use the writing icing to add details to the train such as a window for the cab. Connect the locomotive and the wagons together loosely using strawberry laces. Place the gummi bears on one wagon as passengers and sweets such as sugar balls on the other wagon as freight. Allow every to dry well.
