¾ cup caster sugar
3 tsps Baking powder

1 cup cream
4 Tbsps sugar

Preparation steps

1.
Cream the butter with the sugar until pale, light and fluffy. Add a pinch of salt and beat in the eggs.

Mix the flour and baking powder and sieve onto the mixture. Add the lemon peel and gradually add the milk to produce a batter with a soft dropping consistency. Add more milk if necessary.

Preheat the oven to 180°C (160° fan) | 350F | gas 4. Grease a loaf pan and turn the batter into the pan. Bake on a low shelf of the oven for 50-60 minutes, until golden. Test to see if it is done by inserting a needle or cocktail stick.

Turn the cake out onto a cake rack and let cool completely. It is best to bake the cake the day before you need it.

For the chocolate cream, roughly chop the chocolate and melt in a bain-marie. Remove from the heat.

Separate the eggs. Beat the egg yolks with the vanilla sugar over a hot bain-marie until thick and foamy and the sugar has dissolved.

Beat the well-chilled cream until stiff. Beat the egg whites with the sugar until they form stiff peaks.
8.
Add the egg yolk mixture to the chocolate and stir in with a whisk. Put the whipped cream on top of the chocolate mixture and quickly mix in with a whisk before it sets. Carefully fold in the beaten egg whites.
9.
Cut the cake into exactly 2 halves. Cut away all the crusts and using a large, sharp knife cut the cake halves into oval hedgehog shapes (use the trimmings for a dessert).
10.
Coat both hedgehogs with chocolate cream. Leave the face smooth and roughen the rest of the hedgehog with a pastry brush. Put the whipped cream into a piping bag with a plain nozzle and pipe small blobs all over the hedgehog. Pipe eyes, nose and mouth in cream.
11.
Insert a chocolate stick into each blob of cream. Add chocolate beans to the eyes and nose. Serve well chilled.
