- For Pork
- 1 cup Teriyaki sauce
- 2 garlic cloves (minced)
- 1 Tbsp freshly grated ginger (minced)
- 4 scallions (sliced)
- 32 ozs Pork tenderloin
- For Rice
- 2 Tbsps Canola oil
- ½ cup carrots (julienned)
- ½ cup yellow Bell pepper (julienned)
- ½ cup Snow peas
- ½ cup Bean sprout
- ½ cup peas
- 1 Tbsp sliced, red chili peppers
- 3 cups cooked white rice (to serve)
- 2 Tbsps soy sauce
- 1 Tbsp sesame oil
- 2 Tbsps freshly grated ginger

For Pork:

Combine teriyaki sauce, garlic, ginger, onions and pork in a zip-top bag. Marinate for up to 8 hours in the refrigerator.

Roast in 425º F / 220º C oven until pork is cooked, 20 to 30 minutes or until pork temperature reaches 145 to 150 degrees.

Cover with foil and let rest 10 minutes before slicing.

Heat canola oil in a large nonstick frying pan over medium heat. Add carrot and red pepper, and cook until slightly softened, 4 to 5 minutes.

Add snow peas, bean sprouts, peas, chili pepper and rice; stir to combine. Add soy sauce, sesame oil, and ginger, stir and cook 8 more minutes, until heated through.

Spoon into individual serving dishes and top with sliced pork.
