80 grams sugar

Preparation steps

Zest and juice 2 limes. Soak the gelatin in cold water. Bring 800 ml (approximately 3 1/2 cups) of water, lime juice and half of the sugar to a boil. Remove from the heat, let cool slightly and melt the drained gelatin in the mixture. Stir over a cold water bath until the mixture slowly starts to gel.

Whisk the egg yolks with the remaining sugar over a hot water bath until frothy. Remove from the heat, add the lime zest and beat until cold. Fold the gelatin mixture together with the yolk mixture. Cover and refrigerate for at least 3 hours until the cream has set. Use 2 spoons to form oblong shapes with the lime cream and serve garnished with mint and lime slices.
