- For the ice cream
- 1 Lime (grated zest)
- 5 Limes
- 80 grams sugar
- 80 milliliters white wine
- 1 egg white
- 100 grams Double cream
- To garnish
- Strawberries
- sugar
- Lime zest
- Lemon balm

Preparation steps
1.
Bring sugar and white wine to a boil in a saucepan while stirring, then add lime zest and let cool.

Squeeze the juice from all the limes. Beat the egg white and double cream until slightly stiff.
3.
Pour the lime juice into the wine mixture and stir, add double cream and egg white. Pour the mixture into a shallow metal bowl and freeze for about 4 hours in the freezer, then stir again. (Or finish in an ice machine).
4.
To serve, garnish with sugared strawberries, lime zest and lemon balm leaves.
