- 2 Tbsps butter
- 2 Tbsps all-purpose flour
- 1 ⅔ cups milk
- 1 cup Parmesan (grated)
- Nutmeg
- 2 onions (finely chopped)
- 2 cloves garlic cloves (finely chopped)
- 2 Tbsps olive oil
- 5 cups Mushrooms (sliced, 12 slices set aside)
- 1 Tbsp thyme (chopped)
- 8 Lasagne noodle (halved)
Preparation steps
1.
Melt the butter in a pot and add the flour. Whisk in the milk and allow to simmer and thicken for around 5 minutes. Remove from the heat and stir in 4-5 tbsp Parmesan. Season with salt, ground black pepper and nutmeg.

Fry the onions and the garlic in hot oil. Add the mushrooms and fry until golden. Allow any liquid to fully evaporate and season with salt, ground black pepper and thyme.

Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6.

Spread a little of the Bechamel sauce into 4 individual baking dishes and add half a lasagne sheet to each. Spread with more sauce and 1/3 of the mushroom mixture. Add another lasagne sheet and continue to layer the ingredients in this way.

Finish with the sauce and top with the remaining cheese. Place three of the mushroom slices on each lasagne and bake for around 20-25 minutes until golden brown.
