- 71 ozs Spare rib
- sunflower oil (for brushing)
- 2 garlic cloves (chopped)
- 1 onion (chopped)
- 2 red chili peppers (deseeded and chopped)
- ¼ cup honey
- 1 tsp salt
- freshly ground Black pepper
- 4 Tbsps Tomato paste
- 2 Tbsps Wine vinegar
- Tabasco sauce

Preparation steps
1.
Cut the rib slab into individual ribs. Wash and pat dry.
2.
Put the chilli peppers, onion, garlic, sugar, salt, a dash of pepper, tomato paste, vinegar and tabasco in a saucepan and add 200 ml of water.
3.
Bring to a boil. Simmer until smooth -- about 10 minutes. Remove from heat and allow to cool.
4.
Brush the ribs with a little oil and place them on a grill or under a hot broiler. Cook slowly for about 20 minutes, turning occasionally.
5.
Just before serving brush the ribs with sauce. Pass the remaining sauce at the table.
