- 500 grams honey
- 200 grams Oats
- 200 grams Wheat flake
- 50 grams Sunflower seed
- 50 grams chopped Shelled peanut
- 50 grams Sesame seeds
- 200 grams dried Apricot
- 100 grams dried Cranberry
- 1 generous pinch Vanilla bean
- 1 tsp cinnamon
- 1 pinch salt
- 1 Tbsp Peanut butter
- 2 eggs (separated)
Preparation steps
Gently heat 125 ml (approximately 1/2 cup) water with the honey in a saucepot until the honey dissolves.
Meanwhile, combine the oats, wheat bran, nuts and sesame seeds in a large bowl. Cut the dried fruit into cubes. Add to the dry ingredients along with the spices. Pour the honey water over top, stir in the peanut butter and egg yolks and set aside for 10 minutes.
Preheat the oven to 140°C (approximately 275°F) convection. Line a baking sheet with parchment paper.
Whip the egg whites until stiff and fold into the oat mixture. Spread over the prepared pan, cover with plastic wrap and firmly press down into the baking sheet with a rolling pin. Remove the plastic wrap and bake for 20-30 minutes, until golden brown. While still hot, cut into pieces. Let cool then serve.
