- 4 boneless, skinless Chicken breasts (halves)
- salt (to taste)
- freshly ground Black pepper (to taste)
- 1 Tbsp good-quality olive oil
- 1 Tbsp butter
- 1 Tbsp all-purpose flour
- ⅔ cup Chicken broth
- ⅔ cup Boursin cheese
- 2 Tbsps fresh Chives (snipped)
- 2 Tbsps fresh Tarragon (roughly chopped; plus extra for garnish)
- 1 Tbsp fresh Basil (chopped)
- 2 cups cooked white rice (to serve)
Preparation steps

Rinse chicken under cold running water and pat dry with paper towels. Place chicken between two sheets of plastic wrap and pound with a meat mallet until thinned. Season both sides with salt and pepper.

Heat olive oil and butter, in a skillet, set over medium-low heat. Add chicken breasts and cook, until browned on both sides and cooked through, about 8 to 10 minutes. Transfer to a plate, slice into strips, cover and keep warm.

Stir flour into the pan until blended. Stir in chicken broth and cook, stirring frequently until thickened. Add the Boursin cheese, and herbs and cook, stirring frequently, until the cheese is melted and the sauce is hot.

Divide rice and chicken between plates and spoon hot herb sauce over chicken. Garnish with fresh tarragon sprigs. Serve.
