- 2 stalks Leeks
- 1 Tbsp clarified butter
- 2 tsps salt
- freshly ground peppers
- Nutmeg
- 1 ⅕ liters Beef broth (Instant)
- 1 lg can white Beans (820 grams)
- 2 small, smoked Mettwurst
- 3 Tbsps dark sauce thickener
- 50 grams Whipped cream
- 1 Tbsp Vinegar

Preparation steps
1.
Rinse leeks, trim and cut white and light green portion into rings. Melt butter in a saucepan, sauté leek rings and season with salt, pepper and a little nutmeg. Cut sausages into slices.

Add broth, beans with liquid and sausage slices to a pot, bring to a boil, reduce heat and simmer for about 5 minutes. Mix cornstarch and cream in a bowl, add to the pot, stir, briefly boil and season with salt, pepper and vinegar. Serve in deep plates.
