1 ½ ozs fresh Yeast
10 ozs Whole wheat flour
7 ozs Spelt flour
1 tsp salt
3 Tbsps vegetable oil
1 Tbsp Bran (flakes)
1 Tbsp Pumpkin seed
1 Tbsp Sunflower seed

Preparation steps

Mix the yeast with 9 ounces of lukewarm water. Mix the two types of flour with the salt in a bowl and make a well in the middle. Add the yeast water into the well with the oil.

Knead the dough with the bran flakes and both types of seeds with your hands until smooth, then knead about 10 minutes vigorously. Cover and let rest 1 hour in a warm place. Preheat the oven to 400°F.

Shape the dough into a round loaf and place on a parchment-lined baking sheet. Sprinkle with cold water and bake for about 1 hour. Remove, let cool and serve cut into pieces.
