3 ½ ozs carrots
5 ozs ham (thinly sliced)

4 eggs
2 Tbsps butter

Preparation steps

Wash the lettuce leaves, drain and cut into thin strips. Peel the carrots and cut into thin strips.

Whisk the eggs in a bowl. Melt one tablespoon of butter in an 8 ins (20 cm) skillet and pour in half of the egg mixture. When the egg has set, remove the omelette from the skillet and make the second omelette. Place the omelettes on a plate, arrange the ham, strips of lettuce and carrot over the top, season with salt and pepper and roll up to form a wrap.

Cut in half diagonally and serve.
