1 small Tomato (rinsed; trimmed and sliced)
fresh thyme (for garnish)

Preparation steps

1.
Heat a 10-inch nonstick skillet over medium heat; add butter.

Meanwhile, in a medium bowl whisk eggs together until light and fluffy, season to taste with salt and pepper.

Pour eggs into the hot skillet. Whisk eggs and shake the skillet back and forth over the heat, until eggs begin to set. Let the cook until almost completely set, about 1 to 1 1/2 minutes.
4.
Arrange the ham slices on half of the omelet. Using a rubber spatula, carefully loosen eggs from the edges of the skillet, and then fold the omelet in half over the ham slices.
5.
Transfer the omelet to a serving plate. Garnish with sliced tomato, thyme and cilantro. Serve immediately.
