4 Halibut fillet (each 150 grams)
2 garlic cloves
1 Tbsp vegetable oil
4 peppercorns
½ tsp Coriander
½ tsp fennel seeds
1 small dried chili pepper
4 thyme
4 lemons
300 milliliters fish stock
salt
4 parsley

Preparation steps

Rinse halibut and pat dry. For the broth peel garlic and chop finely. Heat 1 tablespoon oil in a saucepan and sauté garlic about 2 minutes. Grind pepper, coriander, fennel seeds and dried chile pepper in a mortar. Rinse thyme and shake dry. Add crushed spices, thyme and lemon slices to the saucepan, stir, pour in fish stock and season with salt.

Place halibut fillets in hot broth and cook over low heat, covered, for 10-15 minutes. Remove cooked halibut, place in a warm deep plate and pour a little broth over. Garnish with lemon slices and parsley leaves and serve.
