Preparation steps

Rinse and halve chile, remove seeds and ribs, and finely chop. Peel and finely chop onion. Rinse, quarter, core and finely dice tomatoes. Rinse cilantro, shake dry and chop leaves. Halve avocados lengthwise, remove pits and scoop out flesh. Dice avocado flesh and transfer to a bowl. Stir in chile, onion, tomatoes and chopped cilantro. Season with salt, pepper, ground coriander and cumin. Stir in olive oil and lemon juice and season to taste.

Divide guacamole among small bowls and serve with pork rinds.
