Preparation steps

Rinse and quarter the tomatoes, then remove the seeds and finely dice. Halve and peel the avocados, then remove the seeds. Mash half of the avocado pulp with a fork, and finely dice the rest. Peel and finely dice the shallot. Mix the shallot, cilantro, tomatoes, and diced avocados into the mashed avocado and stir until combined.

Season to taste with salt, cayenne pepper and lime juice.

Serve the guacamole with tortilla chips, if you'd like.
