Preparation steps

1.

Rinse scallions, trim and chop white and light green portions. Rinse chile peppers, cut in half lengthwise, remove seeds and dice. Peel avocados, cut in half lengthwise and remove pits. Add avocado to a blender and squeeze lime juice over top.

2.

Rinse cilantro, shake dry, pluck leaves from stem and finely chop. Puree avocado, onion and chile peppers with lime juice and cilantro in a blender and season with salt and pepper. Serve guacamole in a bowl garnished with scallions.
