Preparation steps

1.

Remove the steaks from the refrigerator about 30 minutes before grilling. Rinse off thoroughly, pat dry and season with salt. Sear on all sides on a hot, oiled grill. Pull to the side and finish cooking with indirect heat (with lid closed if desired) until desired doneness (core temperature at least 55°C, approximately 130°F).
