2 Sirloin steak (or ribeye)
olive oil

2 sprigs rosemary
2 cloves garlic cloves (lightly crushed)
½ lemon (juiced)

Preparation steps

1.
Rub the steaks all over with olive oil and season, then place in a dish with the rosemary and garlic. Cover and leave for 30 minutes.

Preheat a griddle pan or the barbecue until searingly hot.
3.
Place the steaks in the pan, placing them away from you and leave for 2 minutes until char marks form.
4.
Turn the steaks over and leave for 3 minutes.
5.
At this point, for rare steak, you can remove them from the heat. If you prefer your beef more well cooked, turn the steaks once more and leave for another minute.
6.
Wrap the steaks securely in a large piece of foil and leave to rest for at least 5 minutes, but no longer than 8.
7.
Just before serving, squeeze over the lemon juice, season again and pour the juices back over the steaks on the plate.
