For the cutlets
8 Lamb cutlets
2 Tbsps olive oil
2 garlic cloves (crushed)
2 Tbsps lemon juice
salt

For the mustard butter
1 Tbsp Mustard
½ tsp lemon juice
1 garlic clove (crushed)
125 grams butter (at room temperature)
salt

2 Tbsps Mustard seed (coarsely crushed)

Preparation steps

For the cutlets, rub the lamb cutlets with olive oil, crushed garlic and lemon juice, and season with salt and pepper. Let marinate for 1 hour.

For the mustard butter, mix the mustard with lemon juice, garlic and butter, and season with salt and pepper. Place the mustard butter in a rectangular mold (with the help of a pallet) and chill in the refrigerator. Cut the mustard butter into thick slices.

Grill the lamb cutlets in a hot grill pan on each side for about 3-4 minutes. Serve the grilled lamb cutlets immediately with the mustard butter.
