Preparation steps

1.

For the marinade, peel and finely chop the onion. Heat the oil in a pan and sweat the onion. Mix in the orange juice, orange zest, lemon juice, tomatoes, and honey. Simmer for 15 minutes. Season to taste with salt, pepper, and tabasco and let cool.

Rinse the chicken, pat dry, and place in the marinade. Marinate for 2-3 hours.

For grilling, remove the meat from the marinade. Place on an oiled grill rack and cook on all sides for 15 minutes (possibly longer depending on size). Brush with the marinade while grilling.
