1 garlic clove
1 tsp Tomato paste
2 Tbsps lemon juice
2 Tbsps sunflower oil
1 tsp honey
1 tsp dried herbes de Provence
salt

4 slices Pineapple
2 Tbsps Cranberry jam

Preparation steps

Preheat the oven to 200°C (approximately 400°F). Preheat a grill as well.

Rinse the chicken breast and pat dry. Peel the garlic and chop finely. Mix with the tomato paste, lemon juice, oil, honey, and herbs. Season with salt and pepper. Brush the chicken breast and the pineapple slices with the tomato sauce. On a rack in a roasting pan cook the chicken for about 5 minutes and turn the breasts. Grill on each side for about 5 minutes. Grill the pineapple briefly.

To serve, top the warm chicken breast with the pineapple slices and place a dot of cranberry jam on top. If desired serve with a salad.
