- 1 cup peach preserves (or jam)
- 2 cloves garlic cloves (peeled and minced)
- 2 Tbsps olive oil
- 1 Tbsp soy sauce
- 1 Tbsp dry mustard powder
- ½ tsp cayenne pepper
- coarse salt
- freshly ground Black pepper (to taste)
- Oil (for grill)
- 31 ½ ozs Chicken thigh (rinsed and patted dry)
- 31 ½ ozs Chicken drumstick (rinsed and patted dry)
- 4 ripe but firm Peaches (pitted and quartered)
- fresh thyme (chopped; for garnish)

Preparation steps

Preheat grill to medium heat.

In a medium bowl, combine preserves, garlic, olive oil, soy sauce, dry mustard, and cayenne. Season with salt and pepper and mix well. Once grill is hot, brush grill grates with vegetable oil. Pat chicken dry with paper towels. Season with salt and pepper and place, skin side down, on the grill.

Cook about 4 to 6 minutes on each side before brushing with glaze. Continue cooking another 5 to 7 minutes, turning chicken every 2 to 3 minutes and brushing top with glaze, until chicken is cooked through. The chicken is done when an instant-read thermometer registers 165ºF when inserted into the thickest part of the chicken. Transfer to serving platter.

While chicken is cooking, place peach quarters on the grill, cut side down, and cook 2 minutes. Turn, and brush with glaze. Grill 2 to 4 minutes more, until the peaches are soft and juicy. Transfer to platter with chicken. Garnish with chopped thyme.
