2 Anchovy fillet
1 Tbsp Caper
150 grams green Olives (pitted)
1 dried Peperoncino
2 Tbsps Cognac
1 garlic clove
1 tsp honey
2 Tbsps olive oil
1 Tbsp freshly chopped oregano
2 Tbsps freshly chopped parsley
salt
freshly ground peppers
1 splash lemon juice

Preparation steps

Dry the anchovies with a paper towel. Add the anchovies to a blender with the capers, olives, pepperoncinos, cognac, and the peeled garlic. Add the honey, and puree to a fine paste. Mix in enough olive oil until a spreadable mixture has formed. Mix in the herbs, and season to taste with salt, pepper, and lemon juice.

Transfer the mixture to a bowl, and serve with a fresh baguette.

If you'd like to make a black tapenade instead, just substitute black olives for the green olives.
