- For the wings
- 16 Chicken wing (boned and cut into chunks)
- 1 ⅓ cups flour
- 1 cup vegetable oil
- 1 ½ Tbsps white wine vinegar
- 2 cloves garlic cloves (crushed)
- ½ tsp cayenne pepper
- 1 Tbsp Worcestershire sauce
- 1 tsp Tabasco sauce
- ½ cup butter
- 4 Tbsps hot sauce
- For the dressing
- ⅔ cup soft Blue cheese (crumbled)
- 2 Tbsps white wine vinegar
- ½ cup Sour cream

Preparation steps
1.
Heat the oven to 200ºC (180º fan) 400ºF, gas 6.

For the wings, place the flour in a plastic bag, season with salt and pepper and add the chicken pieces. Shake well then remove the chicken from the bag and shake off the excess flour.

Heat the oil in a deep pan until smoking and fry the chicken pieces in batches until lightly browned. Drain on kitchen paper and set aside.
4.
Place the remaining ingredients in a small pan and bring to a simmer. Coat the chicken pieces in the sauce then place them on a baking sheet and bake in the oven for 15-20 minutes, basting from time to time.
5.
Meanwhile, make the dressing. Beat the ingredients together until smooth and season with salt and pepper.
6.
Serve the wings with the dressing and the carrot and celery sticks alongside.
