- 1 green Bell pepper (seeds removed and chopped)
- 1 orange Bell pepper (seeds removed and chopped)
- 1 stick Celery (diced)
- 2 carrots (sliced)
- 1 small onion (chopped)
- 4 ½ ozs Sea salt
- water
- 4 cloves garlic cloves (finely chopped)
- ½ tsp freshly ground Black pepper
- 9 ozs Olives
- 1 cup white wine vinegar
- ⅓ cup olive oil
- 3 sprigs rosemary

Preparation steps
1.
Put the peppers, celery and carrots into a bowl. Stir in the salt, and add enough cold water to cover. Cover and refrigerate overnight.
2.
Drain and rinse the vegetables under cold running water.
3.
Mix together the garlic, black pepper and olives. Stir in the vinegar and olive oil, then the drained vegetables and mix well.
4.
Spoon into cold sterilised jars and add the rosemary sprigs. Seal tightly. Refrigerate for 2 days before using.
