400 grams Zucchini
125 grams scallions
1 Tbsp sesame oil
3 Tbsps soy sauce
2 Tbsps Fruit Vinegar
2 Tbsps lemon juice
1 tsp sugar
salt

Preparation steps

Lay the glass noodles in a bowl.

Rinse the zucchini, cut in half lengthwise and remove the soft interior. Cut the zucchini lengthwise into very thin strips.

Trim and rinse the scallions and also cut lengthwise into thin strips.

Add the zucchini and scallions to the noodles and drizzle everything with boiling water. Infuse for 3-4 minutes and then drain in a colander.

For the dressing, combine the sesame oil with the soy sauce, fruit vinegar, lemon juice and sugar and season with salt and cayenne pepper. Mix into the noodles and vegetables and serve immediately.
