- 4 Chicken breasts (skinned)
- 1 bunch parsley (chopped)
- 0.333 cup butter (softened)
- 2 cloves garlic cloves (crushed)
- ½ cup flour
- 2 eggs (beaten)
- 1 cup breadcrumbs
- Oil (for deep frying)
- String bean (to serve)
- baby Spinach (to serve)

1 Cutting board, 1 Small knife, 2 Bowls, 1 Tablespoon, 1 Whisk, 1 Large knife
Preparation steps

Make horizontal slits in each chicken breast to make a pocket.

Mix together the parsley, butter and garlic, season with salt and pepper, and stuff into the pockets in the chicken.
3.
Season the flour with salt and pepper and place in a shallow dish. Dust the chicken breasts with the flour, dip them into the beaten eggs and coat them in the breadcrumbs. Dip them into the eggs once again and then give then a final coat of breadcrumbs.

Heat the oil in a deep pan until smoking then deep fry the chicken for about 10 minutes or until golden brown and cooked through.

Serve immediately with string beans and baby spinach.
