1 Red chili pepper

1 tsp hot Mustard
1 generous pinch lemon zest
100 grams butter (softened)
salt

4 Chicken breasts (each about 140 grams)
3 Tbsps vegetable oil

Preparation steps

Rinse the chile pepper, cut in half, trim and finely chop. Rinse the tarragon, shake dry, strip the leaves and also finely chop. Peel the garlic and press into a bowl. Mix well with the chile, tarragon, mustard, the lemon zest and butter and season with salt and pepper. Place a piece of aluminum foil on the work surface and top with plastic wrap. Place the butter mixutre on it, and use the plastic wrap to shape into a log and wrap in aluminum foil. Twist the ends to seal. Refrigerate at least 30 minutes or until firm.

Rinse the chicken breasts, pat dry and season with salt and pepper. Cook, skin side down, in a hot pan in oil for about 5 minutes until golden brown. Turn and cook another 4-5 minutes until done. Brush with the oil while cooking.

Unroll the butter, cut into slices and serve with the chicken breasts.
