1 organic lemon
100 milliliters cream
1 Tbsp honey
300 grams Greek yogurt
2 Vanilla bean
30 grams butter
500 grams Russet apple
2 Tbsps Apple syrup
Juice (2.5 oranges, or 1/8 liter)
30 grams Walnut

Preparation steps

1.

Rinse the lemons in hot water and dry. Zest the lemon and squeeze the juice. Measure 5 tablespoons of the juice.

Heat the cream and dissolve the honey in it. Stir in the lemon juice, zest, and yogurt. Freeze for 1 hour in an ice cream machine. Cover and place in the freezer. Remove 15 minutes before serving and place in the refrigerator.

Cut the vanilla bean in half and scrape out the paste.

Melt butter in a pan, stir in the vanilla.

Rinse the apples and cut into quarters. Remove the core and cut into quarters or slices. Saute the apple slices on both sides in the vanilla butter.

Bring the apple juice and orange juice to a boil and cook the apples for about 5 minutes. Remove the apple and boil the juice until syrupy.

7.

Chop the walnuts until coarse. Portion the ice cream with a scoop and place on dessert plates. Top with the hot apples and serve sprinkled with walnuts.
