300 grams Bologna sausage
300 grams Cherry tomatoes
100 grams Edam cheese

Preparation steps

Peel potatoes and cut into slices. Heat clarified butter in a large frying pan and fry potato slices for about 10 minutes, turning occasionally. Remove sausage meat from the skin, cut in half lengthwise and cut into 1 cm (approximately 1/2 inch) thick slices. Rinse cherry tomatoes and cut into quarters. Grate cheese or cut into small cubes.

Season fried potatoes with salt, pepper and paprika. Add sausage and fry briefly. Place cherry tomatoes on potatoes in the pan and sprinkle with herbs de provence. Sprinkle cheese on top, cover and cook over low heat for 5 minutes until cheese melts. Serve immediately.
