2 onions
50 grams sliced Pancetta
2 Tbsps clarified butter

2 Tbsps freshly chopped parsley

Preparation steps

1.

Scrub potatoes thoroughly and cook in a pot of boiling salted water until knife-tender, about 20 minutes. Drain and rinse in cold water, then drain again. Peel potatoes and leave to cool.

Peel onions and cut into narrow strips. Cut pancetta into strips.

3.

Cut potatoes into slices. Heat butter in a frying pan and fry potatoes on all sides for about 5 minutes turning occasionally. Add onions and pancetta, fry for another 5 minutes and season with salt and pepper. Serve sprinkled with parsley.
