Fried Noodles with Chicken

- 300 grams Chicken breasts
- 1 egg white
- 2 Tbsps Teriyaki sauce
- 1 Tbsp honey
- 2 Tbsps cornstarch
- 1 small onion
- 1 garlic clove
- 200 grams Snow peas
- 100 grams soybean sprout
- 2 stalks Lemongrass
- 250 grams Udon Noodle
- salt
- 5 Tbsps vegetable oil
- 6 Cashews
Preparation steps
Soak the noodles in cold water. Coarsely chop the cashews and toast in a dry skillet. Mix the egg white, teriyaki sauce, cornstarch and honey together, cut the chicken into strips and marinate in the mixture. Peel the onion, and cut into eighths, peel the garlic, cut in half and finely dice.
Rinse, drain and halve the sugar snap peas diagonally. Rinse the bean sprouts in a colander under cold running water and drain. Remove top from the lemongrass, cut in half lengthwise and pound the roots flat. Cook the pasta in plenty of boiling salted water. Heat he oil in the wok and stir-fry the chicken until it is golden brown. Remove from pan and drain on a paper towel. Remove excess oil from the pan and stir-fry the vegetables in it. Mix the chicken, noodles and bean sprouts, warm, remove the lemongrass and serve sprinkled with nuts.
