3 cups Pork (cut into 1 inch strips)
3 Tbsps green Curry paste
2 Tbsps Lime juice
2 tsps Fish sauce
1 tsp freshly grated ginger (grated)
1 tsp sugar
½ cup Coconut milk
1 cup Baby Corn
1 red Bell pepper (thinly sliced)
1 cup Baby spinach
¼ cup fresh Basil (chopped)
1 ⅔ cups

Preparation steps

1.
Heat oil in a large wok, stir-fry pork until browned all over, add curry paste and stir to coat.

Add lime juice, fish sauce, ginger, sugar and coconut milk cook 3 minutes until pork is cooked through.

Add corn and peppers and stir-fry about 4 minutes, add spinach and basil, stir-fry tossing until leaves are just wilted.
4.
Serve with jasmine rice.
