- 2 Tbsps Peanut oil
- 3 cups Pork (cut into 1 inch strips)
- 3 Tbsps green Curry paste
- 2 Tbsps Lime juice
- 2 tsps Fish sauce
- 1 tsp freshly grated ginger (grated)
- 1 tsp sugar
- ½ cup Coconut milk
- 1 cup Baby Corn
- 1 red Bell pepper (thinly sliced)
- 1 cup Baby spinach
- ¼ cup fresh Basil (chopped)
- 1 ⅔ cups
Preparation steps

Heat oil in a large wok, stir-fry pork until browned all over, add curry paste and stir to coat.

Add lime juice, fish sauce, ginger, sugar and coconut milk cook 3 minutes until pork is cooked through.

Add corn and peppers and stir-fry about 4 minutes, add spinach and basil, stir-fry tossing until leaves are just wilted.
4.
Serve with jasmine rice.
