3 medium-sized potatoes

250 grams cooked Roast beef
1 Red onion
4 Tbsps vegetable oil
1 tsp dried thyme

Preparation steps

1.

Peel potatoes, cut into cubes and cook in salted water, about 20 minutes. Drain.

Cut roast beef into slices and finely chop. Peel, halve and thinly slice onion. In a pan, fry potatoes in 2 tablespoons hot oil, about 5 minutes. Add onion. Add roast beef and thyme and season with salt and pepper. Cook over low heat, 5 minutes more.

3.

In the meantime, fry eggs in remaining oil.

4.

Divide potatoes and roast beef between two plates and top each serving with 2 fried eggs.
