100 grams fresh Lychee
1 Lime (juiced and zested)
3 Tbsps liquid honey
250 grams Yogurt (0.1% fat)
150 grams Coconut milk (canned)

Preparation steps

1.

Peel the pineapple thoroughly and cut into quarters. Remove the stalk and chop the flesh into small pieces.

Peel the mango and cut the flesh into columns.

3.

Peel, core and chop the melon.

4.

Peel the lychees.

5.

Combine all the fruits in a bowl.

6.

Mix the lime juice and zest with 2 tablespoons of honey and drizzle over the fruit.

7.

Mix the yogurt with the coconut milk and remaining honey and place in the refrigerator with the fruit.

8.

Serve the chilled fruit salad with the coconut yogurt.
