Preparation steps

1.

Don't rinse the elderflower. Brush or wipe with a kitchen towel if necessary. Divide the elderflowers into the prepared bottles, and cover with the vinegar so that the flowers are completely covered. Seal tightly, and let infuse for at least 14 days. Infusing 3-4 weeks yields a better product. Store the vinegar in a cool, dark place.

Before using, strain the vinegar through cheesecloth into clean bottles.
