6 sheets white gelatin
600 grams Elderberry
1 strip Lemon peel
1 pinch cinnamon
60 grams sugar
2 tsps cornstarch
400 grams Whipped cream

Preparation steps

1.

Soak gelatin in plenty of cold water. Rinse berries, pluck from stems and place in a pot. Add 500 ml (approximately 2 cups) of water and cook until tender, about 30 minutes. Then strain berries through a fine sieve, reserving the berry juice.

Pour berry juice into a pot. Add lemon zest, cinnamon and sugar. Thicken with equal parts cornstarch and water and boil. Set aside, dissolve gelatine in mixture and cool. Beat cream and fold into berry juice mixture. 

3.

Pour cream into a piping bag with a star tip. Pipe into dessert glasses and serve.
