Those who have, should in any case use apple vinegar for the preparation. Because this type of vinegar not only has a special aroma, but also convinces with some health benefits. The bottles should be sterile at best. This is achieved by boiling the bottles in water for a few minutes before use. When stored in a dark and cool place, the homemade vinegar will keep for about a year.

Preparation steps

1.

Slit the vanilla bean lengthwise. Add to a pot with the allspice, peppercorns, and cloves. Add 1.5 liters (approximately 1.5 quarts) of water, the vinegar essence, sugar, and honey. Bring to a boil, then remove from the heat and cool slightly.

Make sure not to rinse the elderflower. Place in a large container, then pour the cool mixture over them. Cover and let infuse together for about 4 days, stirring occasionally.

Line a colander with cheesecloth. Pour the vinegar mixture through the colander into a pot. Add the salt, bring to a boil, then transfer into prepared clean bottles. Seal immediately, and store in a cool and dark place.
