- For the dressing
- ¼ cup vegetable stock
- ½ tsp Mustard seed
- ½ tsp English mustard
- ½ Tbsp honey
- 2 Tbsps white wine vinegar
- 1 Tbsp olive oil
- salt
- ground Black pepper
- For the salad
- ½ Cantaloupe (halved, seeds removed, balls of fruit scooped out)
- 3 ½ ozs Mozzarella (diced)
- 2 ozs Arugula
- 1 ¾ ozs Serrano ham (thinly sliced)

Preparation steps
1.
For the dressing: heat the stock and add the mustard seeds. Simmer for about 2-3 minutes, then set aside and leave to cool.
2.
Pour the stock into a shaker along with the mustard, honey, vinegar and oil and shake well. Season with salt and ground black pepper.
3.
For the salad: mix together the melon balls, mozzarella and rocket. Arrange on plates and drizzle with the dressing. Place the ham on top.
