Zucchini contain the vital mineral potassium. It is involved in many processes in every cell of the body and regulates, among other things, cell growth, the acid-base balance and maintains blood pressure. It also has a gentle draining effect by flushing excess fluid accumulations from the body.

Preparation steps

Rinse zucchini, trim and finely grate, sprinkle with 1 teaspoon salt and let rest for 10 minutes. Peel onion and chop finely. Coarsely cut white bread and pulverized in a food processor. Grate cheese. Drain zucchini in a colander, then squeeze juice from zucchini with a dish towel.

Rinse mint (set some aside for garnish), shake dry and chop finely. Mix zucchini in a bowl with white bread, cheese, mint and egg yolks and season with salt and pepper. Beat egg whites in a bowl until stiff and fold into zucchini mixture. Heat oil in a frying pan. Create balls from zucchini mixture with two spoons and fry in portions in the pan until brown. Rinse tomatoes, trim, chop and season with salt and pepper. Serve zucchini balls on a plate with chopped tomatoes and garnished with pepperoncini and mint.
