Zucchini contain the vital mineral potassium. It is involved in many processes in every cell of the body and regulates, among other things, cell growth, the acid-base balance and maintains blood pressure. It also has a gentle draining effect by flushing excess fluid accumulations from the body.

In rare cases the zucchini can taste bitter - then it should definitely not be eaten! Because this indicates the presence of the poisonous bitter substances cucurbitacine. Although these have been bred away, they can be found, for example, in courgettes from your own garden.

Formed as small balls, the zucchini fritters are perfect as sauce garnish. For an even spicier taste, you can use a stricter cheese such as mountain cheese instead of Emmental.
