- For the muffins
- ½ cup butter
- ⅓ cup caster sugar
- 2 Tbsps light brown sugar
- 2 eggs
- 1 ½ cups all-purpose flour
- 1 tsp Baking powder
- 1 pinch salt
- ½ cup milk
- 1 cup Chocolate chip
- To decorate
- 1 ¼ cups powdered sugar
- 4 tsps hot water
- 3 ½ ozs Dark chocolate (60% cocoa solids)

Preparation steps
1.
For the muffins: heat the oven to 190°C (170° fan) 375°F gas 5. Place paper cases in a 12 hole muffin tin.
2.
Beat the butter and both sugars in a mixing bowl until light and fluffy.
3.
Gradually beat in the eggs, beating until fully incorporated into the mixture.
4.
Sift in the dry ingredients and gently stir into the mixture. Stir in the milk.
5.
Spoon half the mixture into the paper cases. Sprinkle with half the chocolate chips and cover with the remaining mixture. Add the remaining chocolate chips.
6.
Bake for about 25 minutes, until golden. Cool in the tin for 5 minutes, then place on a wire rack to cool completely.
7.
To decorate: sift the icing sugar into a bowl and gradually stir in the water. Spoon the icing over half the muffins.
8.
Melt the chocolate in a heatproof bowl over a pan of simmering (not boiling) water. Remove from the heat and allow to cool slightly.
9.
Spoon chocolate over the remaining muffins and scatter with sugar sprinkles.
10.
Drizzle the remaining chocolate over the white frosted muffins.
