1 carrot
1 Tbsp vegetable oil
1 tsp Curry powder
100 grams Hummus
salt
freshly ground peppers
1 splash lemon juice
4 Lettuce (such as Lollo bionda)
4 Baguette

Preparation steps

Rinse chicken, pat dry and chop. Peel and grate carrot. Heat oil in a pan and fry chicken and carrot together for about 3 minutes while stirring. Add curry, mix and cook for a few more minutes. Then remove from the heat, add hummus, mix and season with salt, pepper and lemon juice. Let cool.

Rinse lettuce, trim and shake dry. Cut baguette rolls in half horizontally, place lettuce on the bottom half, cover with chicken mixture and top with the top half of baguette. Serve on a plate or wrap in plastic wrap and store for school lunch or picnic.
