Chicken Sandwiches

- 2 Chicken breasts (about 140 grams each)
- 400 milliliters Chicken broth
- 1 Lettuce
- 1 Cucumber
- 3 sprigs parsley
- 100 grams Mayonnaise
- 50 grams Yogurt (0.1% fat)
- 1 tsp Curry powder
- salt
- lemon juice
- peppers
- 4 slices tramezzino
Preparation steps
Rinse the chicken breasts and pat dry with kitchen paper. Bring the broth to a boil in a pot and add the meat. Bring to a boil again, cover and simmer over low heat for about 10 minutes until done. Remove from the heat and allow to cool in the broth.
Meanwhile, rinse the lettuce, shake dry, trim and cut into strips. Peel the cucumber, cut in half lengthwise, remove the seeds and finely dice. Rinse the parsley, shake dry, pluck off the leaves and chop finely.
For the sauce, combine the mayonnaise with the yogurt and curry powder and mix until smooth. Season with salt, lemon juice and pepper.
Remove the chicken breasts from the broth, drain on paper towels and cut into small pieces. Mix with the sauce, the lettuce, the cucumber and the parsley.
Spread 2 slices of bread thickly with the chicken salad sauce and place the remaining bread slices on top.
Serve the sandwiches cut in half diagonally.
