250 grams Goat cheese

8 slices Bread (of your choice)
1 Tbsp Pine nuts
1 Tbsp Borage Leaf (freshly chopped)
4 slices Farmhouse bread

Preparation steps

1.

Peel the cucumber, halve lenghtwise, and remove the seeds with a spoon. Thinly slice half of the cucumber, and coarsely grate the remaining half.

2.

Peel and finely chop the onion. Mix the olive oil, onion, cucumber, borage, pine nuts, and cream cheese. Season to taste with salt and pepper.

3.

Spread the mixture onto 2 slice of bread, and cover with another slice to form a sandwich.
