Cucumber Slices Filled with Goat Cheese
Rinse cucumbers and peel lengthwise with a peeler or a mandoline into thin slices. Season with salt and let stand for about 10 minutes to draw out water. Then pat dry and 3-4 slices per stack crosswise over each other on work surface.
For the filling, mix goat cheese, mascarpone, shallots, vinegar, oil and chopped mint until smooth. Season with salt and pepper. Spread 1 heaping tablespoon of filling on the center of each stack of cucumbers. Fold up and secure each with 2 toothpicks.
Garnish with tomato wedges and mint.
