Preparation steps

1.

Rinse and trim the cucumbers and chop both into 3 pieces. Cut horizontally along each piece to create 4 - 1/2 inch thick slices.

Rinse the chives, shake dry and cut into rolls.

Crumble the goats cheese.

Chop the olives and mix them with olive oil. Season with salt and pepper. Peel and crush the garlic and mix in.

4.

Spread 1 cucumber slice with the olive mixture and 1 with goats cheese and chives. Layer them together and place another cucumber slice on top. Repeat for the remaining cucumber slices and ingredients.

Serve arranged on plates.
