500 grams Fillo or Filo dough (Available in Turkish shops) or puff pastry, rolled out thinly
200 grams spicy Feta
2 bunches parsley
freshly ground pepper
2 medium egg whites
vegetable oil (for frying)

Preparation steps

1.

Separate the sheets of dough carefully. Cut into triangles about 10-12 cm (approximately 4-5 inches) long on the short side. Mash the feta with a fork until crumbly. Rinse the parsley, shake dry and chop. Mix the parsley with the feta and season with pepper.

2.

Brush each triangle with a thin layer of egg white. Place some of the cheese mixture on the wide side of the triangle and roll up to the narrow side.

3.

Heat about 1 finger width (approximately 1/2 inch) of oil in a large pan. Fry the rolls until crispy and drain on paper towel.
