Ingredients

For the batter
3 eggs
250 grams Pastry flour
1 pinch salt
400 milliliters milk
100 milliliters mineral water
vegetable oil (to fry)

Preparation steps

In a large bowl, beat the eggs in a bowl and whisk. Add the flour and salt and mix.

Slowly add Tthe milk while continuing to stir. Add the mineral water and mix until it becomes a smooth batter.

Let rest for about 30 minutes. If batter seems too thick, add a bit more milk.

In a hot pan with a little oil, scoop a ladle of  crepe batter in the pan, gently swirling to spread the batter to a thin layer around the pan.

Cook crepe 1-2 minutes on one side until golden brown, then carefully turn the crepes with a spatula. Cook on the second side for 1-2 minutes until golden brown.

Keep crepes warm in the oven at 80°C (approximately 170°F) until the remainder of the crepes are done.
