600 grams Halibut fillet (ready to cook)
2 garlic cloves
4 Tomatoes
2 scallions
1 Tbsp cilantro (chopped)
Juice of two Limes
1 tsp brown sugar
olive oil
salt
freshly ground peppers

Preparation steps

1.

Rinse fish, pat dry and cut into 8 equal pieces. Drizzle with the juice of one lime. Let marinate about 20 minutes in the refrigerator.

Peel and finely chop garlic.

3.

Blanch tomatoes in boiling water, then peel, quarter, core and dice.

4.

Rinse, trim and cut scallions diagonally into rings.

5.

Mix garlic with diced tomatoes, scallions, cilantro, 2 tablespoons oil, the juice of the remaining lime and sugar. Season with salt and pepper.

6.

Pat fish dry and sauté in 3 tablespoons hot oil, 2-3 minutes per side. Season with salt and pepper and arrange on plates. Serve topped with tomato salsa.
